Peach Compote

  • 8 peaches, pitted and chopped
  • 6 tbsp sugar
  • 1 tsp cinnamon, ground
  • 1 tsp vanilla extract
  • 1 vanilla bean, scraped
  • 2 tbsp Grape Nuts cereal


1. Put the peaches into the Instant Pot and mix with the sugar, cinnamon, vanilla bean, and vanilla extract.

2. Stir well, cover the Instant Pot, and cook on the Manual setting for 3 minutes.

3. Release the pressure for 10 minutes, add the cereal, stir well, transfer the compote to bowls, and serve.

Chocolate Pudding

Preparation Time: 10 minutes

  • 6 oz bittersweet chocolate, chopped
  • ½ cup milk
  • 1½ cup heavy cream
  • 5 egg yolks
  • ⅓ cup brown sugar
  • 2 tsp vanilla extract
  • 1½ cup water
  • ¼ tsp cardamom
  • Salt
  • Crème fraiche, for serving
  • Chocolate shavings, for serving


1. Put the cream and milk in a pot, bring to a simmer over medium heat, take off the heat, add the chocolate and whisk well.

2. In a bowl, mix the egg yolks with the vanilla, sugar, cardamom, and a pinch of salt, stir, strain, and mix with the chocolate mixture.

3. Pour this into a soufflé dish, cover with aluminum foil, place in the steamer basket of the Instant Pot, add water to the Instant Pot, cover, cook on Manual for 18 minutes, and release the pressure naturally.

4. Take the pudding out of the Instant Pot, set aside to cool down, and keep it in the refrigerator for 3 hours before serving with crème Fraiche and chocolate shavings on top.

Refreshing Curd

  • 3 tbsp stevia
  • 12 oz raspberries
  • 2 egg yolks
  • 2 tbsp lemon juice
  • 2 tbsp ghee


1. Put raspberries in your instant pot, add stevia and lemon juice, stir, cover, and cook on High for 2 minutes.

2. Strain this into a bowl, add egg yolks, stir well, and return to your pot.

3. Set the pot on Simmer mode, cook for 2 minutes, add ghee, stir well, transfer to a container and serve cold.

4. Enjoy!

Baklava With Lemon Honey Syrup

Preparation Time: 10 minutes

  • 400 g of filo pastry
  • 300 g of walnuts
  • 250 g of pistachios
  • 200 g of butter
  • 200 g of sugar
  • A tbsp of lemon juice
  • 2 tbsp of honey
  • 300 ml of water


1. Melt the butter in a saucepan and let it cool while chopping the pistachios and almonds together with 2 tablespoons of sugar.

2. Butter the pan, then spread the first sheet of phyllo dough, brush it with the melted butter and place a second and a third on it, still buttering.

3. After the third layer, place chopped walnuts and pistachios and start the process again: for every 3 sheets of buttered pasta, insert a layer of walnuts and pistachios until you finish with the filo pastry.

4. Bake at 180º for 15 minutes.

5. Meanwhile, prepare the syrup and bring the sugar, water, lemon juice, and honey to a boil (over medium heat, stirring constantly).

6. Once cooked, sprinkle the syrup baklava, and let it cool.

7. Serve cut into diamonds and covered with chopped walnuts and pistachios.
