CHICKEN WITH GREEK SALAD

Ingredients

  • 2 tbsp. extra virgin olive oil 
  • ⅓  cup red-wine vinegar 
  • 1 tsp. garlic powder
  • 1 tbsp. chopped fresh dill 
  • ¼ tsp. sea salt
  • ¼ tsp. freshly ground pepper
  • 2 ½ cups chopped cooked chicken
  • 6 cups chopped romaine lettuce
  • 1 cucumber, peeled, seeded, and chopped 
  • 2 medium tomatoes, chopped
  • ½ cup crumbled feta cheese 
  • ½ cup sliced ripe black olives 
  • ½ cup finely chopped red onion

Directions

  1. Whisk the extra virgin olive oil, vinegar, garlic powder, dill, sea salt, and pepper in a large cup.
  2. Add the chicken, lettuce, cucumber, tomatoes, feta, olives, and toss to combine well.
  3. Enjoy!
