OMELET WITH CHEESY APPLE RAISIN AND CINNAMON

Ingredients

  • ⅛ teaspoon cinnamon
  • One medium sweet apple (peeled, cored, and sliced) 
  • Two tablespoons freshly shredded Parmesan cheese 
  • One tablespoon extra-virgin olive oil
  • Two tablespoons seedless black raisins 
  • Four whole eggs
  • Salt and freshly ground pepper to taste 
  • Two tablespoons crumbled blue cheese

Directions

  1. 1/2 tbsp olive oil, sauté apple slices till crispy tender.
  2. Add the raisins, then transfer the apple mixture from the pan and place it in a basin.
  3. Mix the eggs, cheeses, salt, and pepper.
  4. In an omelet pan, heat the remaining olive oil.
  5. Cook a quarter of the beaten egg over low heat, raising the edges to let the uncooked portion run beneath and cook.
  6. For each serving, repeat the process four times.
  7. Place a quarter of the apple mixture on one half of the fried egg. 
  8. Fold it up and sprinkle cinnamon on top.
  9. Enjoy while it’s still hot.
