SHRIMP GRILLED WITH A SALSA OF CUCUMBER & LIME

Ingredients

  • Juice of 1 lime
  • 6 ounces large shrimp (16 to 20 pieces), peeled and deveined, tails left on 
  • ½ cup chopped cucumber
  • Zest of 1 lime
  • 1 teaspoon minced garlic 
  • Freshly ground black pepper 
  • 2 tablespoons olive oil
  • ½ cup chopped mango 
  • Lime wedges for garnish

Directions

  1. Dip four wooden skewers for 30 minutes in water. 
  2. Preheat the grill to moderate temperatures.
  3. Toss the olive oil, lobster, and garlic in a big mixing dish.
  4. Using four shrimp per skewer, loop the shrimp onto the skewers.
  5. Mix the cucumber, mango, lime zest, and lime juice in a shallow bowl, and 
  6. sprinkle with pepper to taste. Keep it aside.
  7. Barbecue the shrimp for around 10 minutes, or until they are crispy and 
  8. grilled through, flipping once.
  9. Toss the shrimp with a pinch of black pepper.
  10. Serve the shrimp with lemon slices on the side with the cucumber salsa.
